A few people have asked for my granola recipe. I literally threw in various bags of nuts and seeds and it turned out ok! 🥣 The recipe below is for a large quantity! It would fill a couple of big jars or great for #savvybargain gifting. It’s not necessarily cheap but comparable to shop bought stuff and a lot nicer and healthier!
150g Bag of mixed seeds
2 teaspoons of cinnamon
4 tablespoons of desiccated coconut
Mix the following and add it in to the dry ingredients...
5 tablespoons coconut oil (melted)
200ml Maple Syrup
Spread over about 4 baking trays and bake for around 25 mins (or until golden)
Then stir in... (or anything else you fancy)
200g chopped dried apricots
100g dried cranberries

•MY CHRISTMAS CHOCOLATE GRANOLA 🎄• I’m back home after a few days out in the New Forest with some friends. As much as I love being away, I miss my own kitchen especially at Christmas time. After indulging in the last few days (and prior to the further indulgence in the coming days!) I fancied something light and Christmassy this morning before I head out to the pub for lunch. I’ve knocked up a batch of chocolate and cranberry granola - it’s got no refined sugar, it’s a doddle to make, super tasty and it will last me till the new year so I’ve got something on hand for the morning after! What do you prep ahead for the festive mornings after?
I’m having mine today with some @coconutcollab coconut yoghurt, some of my cranberry chia jam and a grating of dark chocolate 🍫 - swipe 👉 for this morning’s offering.

2 cups porridge oats
1 cup in total of mixed nuts and seeds (I used hazelnuts, whole almonds and pumpkin seeds)
1/2 cup dried cranberries
2 tablespoons melted coconut oil
2 tablespoons honey, agave or maple syrup
2 tablespoons cacao powder
1 teaspoon ground cinnamon
1/2 teaspoon mixed spice
Grating of fresh nutmeg
1/4 teaspoon Himalayan pink salt - ground
1 teaspoon vanilla extract
1. Preheat oven to 170 degrees C.
2. Mix all ingredients in a bowl and lay out on a baking tray lined with baking paper.
3. Cook for 10 minutes and then take out and mix, cook for a further 5-7 minutes until everything is toasted and brown. Allow to cool, and enjoy!
